Fermentation/Pickling 101: What is it? How does it work? Why is it beneficial? Following are some of the topics that will be covered in the workshop.
Starters: Salt, Sugar, Brine, Whey (Acid), Whey (Sweet), Kefir Grains OR liquid, Kombucha SCOBY
Fermentation: Sauerkraut, Kimchi, Vinegar, Kvass, Sweet Potatoe Fly, Kefir, Kombucha
Pickling/Brine: Broccoli/Cauliflower, Kale/Winter (Cool Crop Greens), Limes, Beets, Potatoes, Sweet Potatoes, Peppers and Onions, Green Papaya, Green Plantains, Pineapple
Anne Alexis is a Certified Holistic Nutritionist and Holistic Health Care Provider with a Masters in Mental Health Counseling. With a Diplôme from Le Cordon Bleu Paris/London, Anne Alexis has over a decade of counseling and coaching experience as well as vast knowledge in the field of food and nutrition. Working as a chef for many years before expanding into the study of nutrition, Anne Alexis traveled the world observing and participating in wellness practices from Europe, Africa, Micronesia, Asia, and Central America. Having worked in counseling services extensively and trained in Traditional Chinese Medicine and Ayurveda, Anne Alexis recognizes first hand the impact that holistic practices can have on the enhancement of life. She incorporates the health benefits of food, and food preparation, to assist clients in maintaining a healthy lifestyle and preventing illness. She utilizes her breadth of experience, in communication and cultural competence, in addition to her variety of wellness techniques, to provide the best care possible for her clients. Anne Alexis brings a unique energy, creativity, and perspective to her work, as well as an ability to successfully interact with culturally diverse populations. She offers nonjudgmental straightforward advice and practices that individuals can incorporate into their everyday life.
Earth Ayni is located in the heart of the Sacred Valley in Urubamba, Peru at an altitude of 9,420 feet. We are nestled in the majestic Andes just below Mt. Chicon (18,175 feet) which offers many amazing treks. Centrally located, it is easy to visit multiple archeological sites in the immediate vicinity and Machu Picchu which is only 2.5 hours away. It is only a short drive, one hour or less, to visit places such as Cusco, Pisac, and Ollantaytambo.
